Not much happening but seen these on telly look good
Stir crazy pork and papaya( sounds yum)
Ingredients
2 tbsp vegetable oil
100g unsalted cashew nuts
1 small fresh red chilli, deseeded and chopped
2 garlic clove, crushed
600g Pork fillet, thinly sliced
1 bunch of Chinese greens, trimmed and roughly sliced
zest and juice of 1 lime
1 tbsp Soy Sauce
1 papaya, sliced
brown rice, to serve
Method1. Heat 1 tablespoon of the vegetable oil in a wok over medium heat. Add the cashews and gently toss until golden brown. Remove with a perforated spoon and set aside. 2. Heat the remaining tablespoon of oil. Add the chilli and garlic, and stir-fry for 1 minute. 3. Raise the heat and add the pork, greens and lime zest. Fry for a few minutes until pork begins to colour. 4. Add the lime juice, soy sauce and papaya. Heat through for 1 minute, stirring. 5. Return the cashews to the wok and toss to mix. 6. Remove from heat and serve with brown rice or wholewheat noodles.
This one looks like a good one.
I'll be trying it next week when I've been shopping that is for sure.
Grilled Summer Fruits.
Nonstick spray
3 firm but ripe nectarines, halved, pitted
3 firm but ripe purple/black plums, halved, pitted
3 firm but ripe red plums, halved, pitted
6 metal skewers or thick wooden skewers soaked in water 30 minutes
3 tablespoons sugar(can't see y u can't use Slenda)
*Other fruit substitutions can be apricots and peaches
Spray the grill rack with nonstick spray and prepare the barbecue(medium-high heat). Thread 1 piece of each fruit on each of 6skewers so that the cut sides line up and lay flat. Sprinkle thesugar over the cut sides of the fruit. Let stand until the sugardissolves, about 10 minutes.Place the fruit skewers on the grill cut side down. Grill the fruituntil it is heated through and caramelized, about 5 minutes.Transfer 1 fruit skewer to each plate and serve.
